Cassons Crab Knife About the Casson's crab knife.

The casson's crab knife is designed different then other crab knives on the market in that most crab knives are designed for only picking the meat out of the crab, and many have a sharp edge and are very pointy. The casson's crab knife is designed for not only picking the meat out of the crab but also for eating the meat as you are picking the crab.I like to call my knife " THE CRAB EATING KNIFE". Because The point of the casson's knife is not a real sharp point but is rounded enough to get into all areas of the crabs body and claws, yet you can go right to your mouth with the crab meat without cutting or sticking yourself. The handle of the Casson's knife is also designed to be used as a mallet it being heavy enough to crack a claw shell.

About the crab Mallet.

The Casson's Crab Mallet are of a different design also, each mallet head has one end that has been shaping to make a more narrow edge which allows you to crack a smaller part of the claw without smashing the whole thing.So we say "CRACK'EM DON'T SMASH'EM". They come in sets of four in a nylon drawstring bag, made of hard wood and sanded to a smooth finish.

In designing my oyster knives I gave a lot of attention to the handle, the handle is ergonomically molded so you can get a firm grip for pushing and twisting to open the oyster shell. It is also large enough so your fingers do not get cramped. I have talked to some old-timer's in the oyster business they all liked the feel and size of my knife handle. I will have several sizes and shapes of the blade to go with this design of the handle.There are two main ways of opening the oyster, from the front of the shell or from the hinge.
The Two Blades:The Blade on the Mother-of-Pearl handle is designed to open the smaller oysters ,and open them from the front of the shell.The Blade has a slight bend, and is not made for heavy duty use.The Blade on the Black handle is designed for larger oysters,and to open them from the hinge end of the oyster shell,the Blade is longer, and is made for Heavy-Duty use.

The Blade is a different design than the typical fillet Knife,I chose this shape because it is widely used by professionals,excellent for Large and Smaller Fish.The semi-flexable Blade is made of top quality stainless steel ( high carbon with Rockwell rating of 50 HRC-54 HRC/inox food industry grade designed for resharpening.)
About the Handle.
It is of a new design as well, it is called a double soft-grip handle,having an inner and outer layer, for stability and durability. Totally hygienic and Dishwasher safe, and ergonomically designed for comfort.
